Ingredients:
-1 large red bell pepper, finely diced
-6.2 oz self raising flour
-1 egg
-1/4 cup butter
-3 fl oz whole milk
-2.6 oz cheddar cheese, grated
-1 tsp low salt tomato purée
-1/4 tsp garlic powder
-1/2 tsp dried mixed herbs
-A good grind of black pepper
Method
-Combine the egg, butter, milk, tomato purée and finely diced pepper
-Add 1.9 oz of the cheese (holding aside 0.7 oz to sprinkle on before baking)
-Sift in the flour and add the seasonings, then mix thoroughly to combine
-Split the mixture evenly into 12 muffin pans, then sprinkle the remaining cheese on the top of your muffins
-Bake at 400F for 22 minutes until golden brown
