This creamy pea and mint pasta is a delicious and nutritious recipe designed for babies and fussy toddlers alike. The vibrant green peas provide a punch of colour as well as adding sweetness to the sauce, and the touch of mint offers a refreshing flavour that even the pickiest eaters will love. Healthy fats from the cream cheese don’t just please those tiny taste buds, they also aid brain development! This recipe is super quick to throw together and any leftover sauce will keep for 24 hours in an airtight container in the fridge for a quick lunch the following day 🤗

Ingredients

1 cup cooked peas

6 mint leaves, torn

Juice of 1/2 lemon

1/2 cup of water

2 tbsp full fat cream cheese
 

Method

-Add cooked peas to a blender with 6 torn mint leaves and the juice of half a lemon, and blitz to combine

-After 30 seconds scrape down the sides and add 1/2 cup of water

-Continue blending until your pea puree is smooth (add a splash more water if needed!)

-Add the cream cheese and blend to thoroughly combine

-Pour the sauce over freshly cooked pasta (season with salt and pepper for grown ups and older children)


Tip: If your little one isn’t keen on garden peas, try petit pois for a sweet alternative
