These are perfect for lunchboxes or a quick after school snack - packed with protein for a healthy energy boost!

The Pumpkin Spice Energy Balls can be made in under 10 minutes, require no cooking and can be kept in an air tight container in the refrigerator for up to 2 weeks 🙌🏻

You could make your own pumpkin purée by steaming pumpkin until soft and then blending, or just use canned pumpkin puree from the store.

(You can also substitute butternut squash or sweet potato if you can’t find pumpkin)

👶🏻Suitable for babies over 12 months - the peanut butter makes these quite sticky so I wouldn’t advise them for very young babies still learning to chew

Ready in under 10 minutes

❄️Keep refrigerated in an air tight container for up to 2 weeks

Ingredients

-1 cup rolled oats

-3 tbsp smooth peanut butter

-3 tbsp pumpkin purée (approx 1 x 70g pouch)

-1 tbsp maple syrup

-1 tsp vanilla extract

-1/8 tsp ground cinnamon

-a large pinch of ground nutmeg

-OPTIONAL: desiccated coconut for coating

Method

-Add all ingredients except the desiccated coconut to a food processor/blender and blitz until combined, scraping down the sides as needed

-Once the dough holds together when you squeeze it, roll into little balls using the palms of your hands

-OPTIONAL: Roll the balls in some desiccated coconut until coated
