A fun looking, great tasting, easy to make meal for everyone.
Why not have a go at making this delicious pea and carrot paella? Lots of lovely veggies and protein too. Whether you want to make faces with this delicious dish is completely up to you!
Ingredients

- 200g paella rice
- 1 large clove garlic (crushed)
- 2 small leeks finely sliced
- 3.75 cups low-salt chicken stock
- 120g frozen peas
- 1 carrot (grated)
- 1 zucchini (grated)
- 50g mature cheese (grated)
- 140g cooked shrimp (or cooked chicken)
- Pinch of pepper
Method
Step 1
Put the rice, garlic and leeks into a large microwaveable bowl, then pour in 1.75 cups stock. Cover with plastic wrap and microwave on High for 10 mins.
Step 2
Stir the rice, then add another 1 cups of the remaining stock, cover and microwave on High again for 3 mins.
Step 3
Stir the rice again, then add the frozen peas, zucchini and the rest of the stock. Cover and microwave on the same setting for a further 8 mins.
Step 4
Stir in the cheese and cooked shrimp (or cooked chicken if you’d prefer), then leave the paella to stand for 2 mins. Scatter with more cheese, make your face, and serve. (Add cooked green beans for hair!)
