Apple Pie Flax Muffins

Great for lunchboxes, perfect for little hands and soft enough for babies just starting their weaning journey!

These lovely little mini Apple Pie Flax Muffins are egg and dairy free, making them suitable for vegans and those with allergies. They also contain ground flaxseed which is a great source of nutrients such as iron, zinc and omega 3, as well as healthy fats and fibre. If you don’t have time to make your own apple purée, most supermarkets sell 70g pouches of fruit purée which work brilliantly. 👶🏻Suitable for babies from 6 months 🌱Vegan 🥣Makes 24 mini muffins ❄️Can be frozen for up to 3 months 

Ingredients:

-150g plain flour
-1.5 tsp baking powder
-2 tbsp ground flaxseed
-150ml milk of choice
-70g apple purée
-1/2 tsp ground cinnamon

Method:

-Combine all the ingredients and mix well
-Fill a mini muffin mould half way up with the mixture, leaving room for them to rise
-Bake at 200c fan for 10-12 minutes until golden. When you insert a toothpick into the centre of the muffins it should come out clean
-Store leftover muffins in an airtight container in the fridge for up to 3 days or in the freezer for up to 3 months
