This is great as a breakfast alternative to porridge, or a sweet treat at the end of a meal.
Ingredients
4 tablespoons chia seeds
190ml milk
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 grated apple (approx 2.5 tablespoons)
2 tablespoons full fat yoghurt
Method
- Combine all ingredients and mix thoroughly
- Leave in fridge overnight to thicken
- Stir thoroughly before serving to break up any clumps of chia seeds
Store in an airtight container in the fridge for up to 5 days
OPTIONAL - blend the chia seed pudding for a creamier custard consistency
