Easy Pea and Carrot Paella Bonanza with Prawns!

A fun looking, great tasting, easy to make meal for everyone.

Why not have a go at making this delicious pea and carrot paella? Lots of lovely veggies and protein too. Whether you want to make faces with this delicious dish is completely up to you!

Ingredients

  • 200g paella rice
  • 1 large clove garlic (crushed)
  • 2 small leeks finely sliced
  • 900ml low-salt chicken stock
  • 120g frozen peas
  • 1 carrot (grated)
  • 1 courgette (grated)
  • 50g mature cheese (grated)
  • 140g cooked prawns (or cooked chicken)
  • Pinch of pepper

Method

Step 1
Put the rice, garlic and leeks into a large microwaveable bowl, then pour in 400ml stock. Cover with cling film and microwave on High for 10 mins.
Step 2
Stir the rice, then add another 250ml of the remaining stock, cover and microwave on High again for 3 mins.
Step 3
Stir the rice again, then add the frozen peas, courgette and the rest of the stock. Cover and microwave on the same setting for a further 8 mins.
Step 4

Stir in the cheese and cooked prawns (or cooked chicken if you’d prefer), then leave the paella to stand for 2 mins. Scatter with more cheese, make your face, and serve. (Add cooked green beans for hair!)
