Ingredients
1 cup cooked peas
6 mint leaves, torn
Juice of 1/2 lemon
1/2 cup of water
2 tbsp full fat cream cheese
Method
-Add cooked peas to a blender with 6 torn mint leaves and the juice of half a lemon, and blitz to combine
-After 30 seconds scrape down the sides and add 1/2 cup of water
-Continue blending until your pea puree is smooth (add a splash more water if needed!)
-Add the cream cheese and blend to thoroughly combine
-Pour the sauce over freshly cooked pasta (season with salt and pepper for grown ups and older children)
Tip: If your little one isn’t keen on garden peas, try petit pois for a sweet alternative
