This mildly spiced chunky soup is the perfect introduction to soups and stews for little ones.
The warming flavours and creamy coconut sauce of this Sweet Potato and Lentil soup are just what you need on a chilly autumn evening!

Ingredients:
-2 x large sweet potatoes (approx 350g)
-1 x large carrot (approx 100g)
-1/4 cup red lentils
-1/2 tsp turmeric
-1/2 tsp cumin
-200ml full fat coconut milk
-500ml low salt vegetable stock
-1 tsp coconut oil
Method
-Peel and chop the sweet potato and carrot into small chunks
-Add the coconut oil to a large pan and fry the sweet potato and carrot for 2-3 minutes
-Sprinkle in the spices then stir thoroughly to coat the vegetables
-Add the red lentils, stock and coconut milk, and stir to combine
-Cover and simmer on medium heat for approx 25 minutes or until the veggies are soft
-Lightly mash the soup to thicken the sauce (you can adjust this to suit you, making it creamier for younger babies or leaving it chunkier for older kids)
-Add salt to grown up portions and serve with crusty bread
TOP TIP: for very young babies who haven’t mastered spoon feeding themselves, dip fingers of toasted or crusty bread into the soup and allow them to chew on them!
