Sweet Potato & Lentil Soup

This mildly spiced chunky Sweet Potato and Lentil soup is the perfect introduction to soups and stews for little ones – the warming flavours and creamy coconut sauce are just what you need on a chilly autumn evening!

Ingredients:

-2 x large sweet potatoes (approx 350g)

-1 x large carrot (approx 100g)

-1/4 cup red lentils

-1/2 tsp turmeric

-1/2 tsp cumin

-200ml full fat coconut milk

-500ml low salt vegetable stock

-1 tsp coconut oil

Method:

-Peel and chop the sweet potato and carrot into small chunks

-Add the coconut oil to a large pan and fry the sweet potato and carrot for 2-3 minutes

-Add the spices and stir thoroughly to coat the vegetables

-Add the red lentils, stock and coconut milk, and stir to combine

-Cover and simmer on medium heat for approx 25 minutes or until the veggies are soft

-Lightly mash the soup to thicken the sauce (you can adjust this to suit you, making it creamier for younger babies or leaving it chunkier for older kids)

-Add salt to grown up portions and serve with crusty bread

TOP TIP: for very young babies who haven’t mastered spoon feeding themselves, dip fingers of toasted or crusty bread into the soup and allow them to chew on them!
