Mango and Coconut Yoghurt Bark

This super simple recipe is a perfect cooling treat for those hot summer days.

This yoghurt bark recipe makes a nice low-mess alternative to a bowl of yoghurt for self feeding babies!  It also works with full fat vegan yoghurt, so you can easily modify it to be dairy free for allergy sufferers.

👶🏻Suitable from 6months

🌱Can be made suitable for vegans

❄️Keeps in the freezer for up to 3 months

-1 tub of full fat yoghurt

-3-4 tbsp mango purée

-2 tbsp finely chopped mango pieces

-1 tbsp desiccated coconut

-Line a baking pan with greaseproof paper and pour the yoghurt on top, spreading it to the edges of the pan

-Swirl the mango purée through the yoghurt, then top with the mango chunks

-Sprinkle the yoghurt with the desiccated coconut

-Put in the freezer for at least 2 hours until the yoghurt has frozen solid, then break into chunks of yoghurt ‘bark’

-Serve immediately out of the freezer and enjoy!
