Avocado Breakfast Nests

Looking for a fresh take on eggs to keep breakfast interesting? Try this fast and easy combo. We love all things avocado for any time of day!

Ingredients

1 Green Onion, chopped
1/4 Fresh Tomato, diced
1/2 Avocado
1/4 Shredded Mozzarella (optional)
1 Egg, beaten
Pepper to taste

Instructions

Slice your avocado into pieces lengthwise and leave a hole where the seed was.

Place into a frying pan on medium heat and pour your egg into the holes of the avocado.

We prefer to beat the egg first, but you can also pour the egg yolk into the hole by itself.

Let it fry to your desired liking, season with pepper if you’d like (or not depending on your little one) sprinkle with cheese and let it melt.

Put it on a plate, and top with tomato and onion!
